1½ Cup Whole Wheat Flour
½ Cup Cocoa Powder
½ tsp. Baking Soda
1½ tsp. Baking Powder
¼ tsp. Salt (optional)
1 tsp. Cinnamon
1 Cup Sugar
1 Cup Applesauce
1 tsp. Vanilla Extract
1 Medium Zucchini (grated)
¼ Cup Vegan Chocolate Chips
⅓ Cup Raisins (or preferred dried fruit, optional)
Method:
Combine flour, cocoa, baking soda, baking powder, salt and cinnamon.
In a separate bowl, combine sugar, applesauce and vanilla. Stir in grated zucchini.
Mix dry and wet ingredients. Fold in your chocolate chips and dried fruit.
Pour batter into loaf pan, decorate top with more chocolate chips is desired and bake for 45-55 minutes.
Tips:
Grease loaf tin with coconut oil if needed.
Add walnuts instead of dried fruit if preferred (fat content will increase).
Ganache:
1 Cup Chocolate Chips
2 tablespoons Icing Sugar
1¼ teaspoons Cinnamon
3-4 tablespoons warm nondairy milk
