Ingredients:
1 cup pitted dates (about 10 medjool)
1 cup boiling water
1 teaspoon blended peeled lemon (or lemon juice)
Method:
Combine the dates and hot water in a heatproof bowl and set aside for 1 hour to soften the dates. Transfer the dates and water to a high-speed blender. Add the lemon and blend until smooth. Transfer to a glass jar or other airtight container with a tight-fitting lid.
Store the syrup in the refrigerator for up to 2 to 3 weeks. Can be frozen. It doesn't freeze solid due to the high sugar composition so can be scooped out when needed.

Overnight Oats
Base:
1/2 cup Oats
1/2 cup Plant Milk
1/2 cup Oats
1/2 cup Plant Milk
1 tbsp Date Paste mixed in (optional)
Recipes:

Banana (chopped)
Cinnamon for sprinkling on top
Put in the fridge overnight or room temperature for 2 hours, add chopped banana and cinnamon just before eating.
